Malai Ghevar is a traditional Indian sweet dish that is often made during festivals and special occasions. Here is a basic recipe for making Malai Ghevar:
Ingredients:
- 1 cup all-purpose flour (maida)
- 1/4 cup semolina (suji)
- 1/4 cup curd
- 1/4 cup ghee
- 1/2 cup milk
- 1/2 cup sugar
- 1/2 tsp cardamom powder
- Oil for deep frying
- Malai (thick cream) for garnish
Instructions:
- In a mixing bowl, combine the all-purpose flour, semolina, curd, ghee, and milk to make a smooth batter.
- Cover the batter and set it aside for about 2 hours to ferment.
- Heat oil for deep frying in a kadhai or deep pan.
- Once the oil is hot, take small portions of the batter and drop them into the hot oil using your fingers.
- Fry the Ghevar on medium heat until golden brown and crispy.
- In a separate pan, heat the sugar and 1/4 cup of water to make a syrup. Add cardamom powder and mix well.
- Once the Ghevar is fried, soak them in the sugar syrup for a few minutes.
- Remove them from the syrup and place them on a plate.
- Garnish with malai (thick cream) and serve hot.
Note: You can also add food color to the batter to give it a vibrant look.
