Malai Ghevar is a traditional Indian sweet dish that is often made during festivals and special occasions. Here is a basic recipe for making Malai Ghevar:


Ingredients:

  • 1 cup all-purpose flour (maida)
  • 1/4 cup semolina (suji)
  • 1/4 cup curd
  • 1/4 cup ghee
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1/2 tsp cardamom powder
  • Oil for deep frying
  • Malai (thick cream) for garnish

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, semolina, curd, ghee, and milk to make a smooth batter.
  2. Cover the batter and set it aside for about 2 hours to ferment.
  3. Heat oil for deep frying in a kadhai or deep pan.
  4. Once the oil is hot, take small portions of the batter and drop them into the hot oil using your fingers.
  5. Fry the Ghevar on medium heat until golden brown and crispy.
  6. In a separate pan, heat the sugar and 1/4 cup of water to make a syrup. Add cardamom powder and mix well.
  7. Once the Ghevar is fried, soak them in the sugar syrup for a few minutes.
  8. Remove them from the syrup and place them on a plate.
  9. Garnish with malai (thick cream) and serve hot.

Note: You can also add food color to the batter to give it a vibrant look.
